If you haven’t figured it out already, I like to stuff my veggies with food! It makes the experience fun and when you bake it all the flavors blend together making the meal taste even better. I was craving some sort of comfort food so I pretty much put my refrigerator into a pepper! :p Because my schedule is so crazy, making these is great for meal prepping! I topped this with what else but guacamole! These are full of protein and a bunch of our essential micronutrients. Nom nom!
I was introduced to yucca about a year ago and I fell in LOVE. Yucca is really the South American version of an American white potato but the taste is very different and to me, delicious! Like potatoes, yucca is a very high starch and carbohydrate vegetable. It also shares similar nutritional values as the potato. I love discovering new foods and finding ways to incorporate them into fun meals. Not only is this one fun but it’s delicious! If you are prepping for a high intensity work out the next morning, I highly recommend eating some yucca to fuel your body for a successful work out!
With holidays around the corner it’s natural for all of us to start craving certain foods, especially sweets! In order for me to satisfy those cravings I need to get creative in the kitchen. This recipe was inspired through Kind Bars. I was just traveling recently and when I travel my go-to snack in desperate needs is Kind Bars. They are bars that are dense in nuts and glued together with honey! Who doesn’t like a blend of nuts and honey! I promise you’ll love these and they will for sure satisfy that cookie/sugar craving!
A lot of people always ask me if I ever eat off of “paleo” and to be honest, I don’t. However, that doesn’t mean that anything non-paleo isn’t still nutritional for you. For me, its just a personal choice. Although, for my non-paleo people I wanted to incorporate something new. This meal has all of your essential needs that are great for a post work out. Loaded with protein, complex carbs, healthy fats and micronutrients from your veggies!
This was absolutely amazing!! I pretty much took all of my favorite things and blended them together. Per usual, I don’t have much time to dedicate to cooking intense meals these days. This took me less than 30 mins to make and it was amazing. It’s packed with protein, healthy fat and essential micronutrients. Great for a post work out dinner. I also threw in some plantains for added potassium and a carbohydrate source. If you’re in a jam with time and want a meal that will satisfy every taste bud you have – try this!!
Every now and then I get a craving for some good Chinese food so when this happens I do what I love to do best – I love turning foods into Paleo friendly meals. I looked in my cabinet and I had coconut aminos, balsamic, garlic and sesame seeds, so I figured I’d give this a try to see how it turned out not thinking it would of turned out as good as it did. This is probably the closest to Asian food I will ever get! :p My favorite part about this was it took me under 10 mins. From work, to CrossFit to home to do school work I am all about my 10 minute delicious meals. If you’re craving something different and delicious try this!
It isn’t Labor Day unless you have a yummy juicy everything amazingness burger! This literally took me 10 minutes to make and it put that :) on my face! What I love most about this burger is it has all your essentials – your meat protein, your healthy fat, your complex carbohydrate and some green. I ate this with a side of grilled asparagus sprinkled with lemon – perfect end to summer meal.
