Every now and then I get a craving for some good Chinese food so when this happens I do what I love to do best – I love turning foods into Paleo friendly meals. I looked in my cabinet and I had coconut aminos, balsamic, garlic and sesame seeds, so I figured I’d give this a try to see how it turned out not thinking it would of turned out as good as it did. This is probably the closest to Asian food I will ever get! :p My favorite part about this was it took me under 10 mins. From work, to CrossFit to home to do school work I am all about my 10 minute delicious meals. If you’re craving something different and delicious try this!
It isn’t Labor Day unless you have a yummy juicy everything amazingness burger! This literally took me 10 minutes to make and it put that :) on my face! What I love most about this burger is it has all your essentials – your meat protein, your healthy fat, your complex carbohydrate and some green. I ate this with a side of grilled asparagus sprinkled with lemon – perfect end to summer meal.
Sometimes all a girl needs is a little “Italian” in her life. I haven’t made Zoodles in a while and wanted to change it up a little bit. I’m a big cilantro girl but I shop at a fresh produce Peruvian Market and you could smell the fresh basil when you opened the door, I couldn’t resist. Basil is good for making pesto’s, putting in sauces but it’s also amazing to just dice up as is and mix in with your food. If you’re craving some yummy Italian, try this out! One of my favorite things in the world to eat is pancakes. My Dad used to make them for us on Sunday mornings growing up. He had a passion for making the ‘perfect’ pancake batter which as usual with anything he was passionate about, succeeded. I love pancakes and often miss just the traditional white-flour pancakes so in order to satisfy my cravings, I need to get creative. I just completed my first semester of my Masters Program. So I’m going to start incorporating and sharing information that I learn in my blog to update everyone else! Here are some fun facts about Sweet Potatoes and why they are a necessity in our diets – Sweet Potatoes are one of the most nutritious vegetables. They are filled with Vitamin B6, Iron, Potassium and Fiber. They carry no fat and are low in sodium. They are also strong in Vitamin A which is necessary for strong tissues, maintaining a healthy immune system and help prevent against cardiovascular disease. Lastly, they are a great source of complex carbohydrates which our bodies need to produce energy. So try these out pre or post work out or just if you just have that pancake craving. I promise you’ll love them as much as I do!
Before taking a quiz on Sunday night I needed to come up with something that was delicious, nutritious, brain powerful and quick to make. Avocado’s are considered as healthy fats and are a good source of fiber, potassium and vitamins (C,K, B6). They are full of heart healthy unsaturated fats. Meaning, they help improve and control blood cholesterol levels which help with heart disease. They also help benefit insulin levels and control blood sugar. And of course, healthy fats help with energy production. As it’s summer, I grill every.single.day. I rarely turn on that stove – I grill everything! It’s my favorite toy. I had some jumbo shrimp so I grilled these and mixed this together with a healthy avocado salad. I dare you to try it! :p
I always forget how amazing watermelon is, until I eat it. Especially on a hot summer day! Watermelon has everything you need to beat the summer heat. It’s amazingly delicious and thirst-quenching. After learning about the different Vitamins in my Micronutrient class, I’ve learned (in more depth) how incredibly important vitamins are for us and their mechanism functions in our body. Here’s a little nerd talk for you – Watermelon is an excellent source of Vitamin-A which is a powerful natural anti-oxidant. It is essential for vision and immunity. It also is required for maintaining healthy mucus membranes and skin. It also contains Vitamin B6 (pyridoxine), Vit B1 (thiamine), Vitamin C and Manganese. I won’t go into detail about each but just know they are all important and essential! So enough nerd talk…! I love my fruit salsa’s and this was my favorite so far. Like all the fruit salsa’s I make, this goes well with anything. Especially fish!
I’m always looking to keep things interesting with food but I have a tendency to find something I like, a lot, and want to find different ways of eating it. Zoodles are so easy and so good. You can use them and eat them the same way you would with pasta. Here’s another quick option to eat with zucchini noodles! It really doesn’t get any easier than this.
